Did you know honeybees take pollen, nectar, and resin from all sorts of plants but leave them completely unharmed?
We got into beekeeping on a pure whim. We’ve all heard news stories about the decline of pollinators, not just honeybees, worldwide. There are myriad reasons for this, ie, loss of essential forage, pesticides, and pests to name a few. We have to admit, we never really thought about all the food we put on our tables for which honeybees have helped make possible, not to mention all the beautiful flowers and trees they pollinate. All of that changed when we decided to try our hand at beekeeping.
Keeping bees in a box couldn’t be that big of a deal, right? I’m familiar with caring for cattle and sheep, so how hard could it be to corral bees in a box? Well, let me tell you, it’s much more difficult than herding cats - and I have cats, too.
We currently live in Houston, Texas, and started our apiary in April of 2018. We started out with one hive in our small suburban backyard consisting of about 30,000 bees. Everyone told us we should begin this journey with two hives. The reason for that is because if we lost one hive due to our ineptness, or to other catastrophes, we would at least have one left. Not knowing if we'd like beekeeping, we started out with the one hive anyway. It was so mesmerizing to watch the bees flying out and flying back in with all colors of pollen on their legs. It seemed so effortless and the bees seemed not to care that we were out there watching them. At times, I would walk over to the hive to get a closer look. Everything was good, so in August of that same year, we decided to get another hive because the first one we had was such a breeze. Then is when we started finding out about "our" learning curve. Our second hive was a bit more particular about our proximity to them and let us know in short order where we were not to be.
They’ve taught us quite a lot, and we continue to learn things from them. We now have multiple hives and all of them have their own collective personalities. What works for one hive doesn't necessarily apply to the rest.
We enjoy it and our goal is to share what we’ve learned and encourage others to become beekeepers. Wild nature is certainly a lot more interesting than human nature.

Our jams are made with fresh fruit, raw honey instead of sugar, and alcohol to enhance the flavor. Per volume, the alcohol content is about 3%.
We respect one’s personal, medical, and religious convictions on the use and consumption of alcohol.
Although we strive to bring you a tasty, delectable treat, we do acknowledge that a certain percentage of alcohol does remain in our product even after cooking.
We bring our jams to 200 degrees for a period of time, which allows it to set properly, and easily spread over your favorite breads, biscuits, cheeses and even meats. However, even after the cooking and canning process, about 40% or less of the alcohol used in our recipes will remain.
We do accommodate those individuals who prefer traditional fruit jams and would rather have it “not so spirited”. We invite you to try our straight jams instead.
